Pistachio (Pistacia vera) is an edible shell fruit from the gum tree family (Anacardiaceae), the seed and tree of this fruit. It is also known as Damascus nut in some regions. It grows from the pistachio tree, it is oily, thin-shelled. It is used in the confectionery and food industry.
The modern production of Pistachios originating from the Middle East and Central Asia is concentrated in Iran, the United States and China.
